Better Than Takeout Thai Drunken Noodles. Spend the 30 minutes you would normally be spending waiting for takeout to arrive at the front door to prep this Thai drunken noodle dish. Toast the dried shrimp in a skillet until crispy, over medium heat, 4 minutes, then chop small. Mix tamarind water, fish sauce, and sugar in a small bowl, set aside. Pat dry tofu with paper towels, pressing down to release water, and cut into 1inch long strips, ⅓ inch thick. ( see photo).
Place a wok or high-sided frying pan over a high heat and add the oil. Heat for a couple of minutes then add the carrot, spring onions and courgette/bean sprouts. Cook for 3-4 means, stirring constantly. Drain the noodles and add them to the pan, before pouring the sauce over the top and stirring through.

Heat up a wok or large frying pan on medium high heat until a drop of water sizzles, add 1 tablespoon of oil, swirl to coat. Add and saute onions, white parts of scallions, and garlic until fragrant, 30 seconds. Add chicken and stir fry until 50% cooked, 2 minutes. Add shrimp and stir fry until 50% cooked, 1-2 minutes.

Directions. Combine water and rice in a saucepan over medium-high heat; bring to a boil. Reduce heat to low, cover, and simmer until rice is tender and liquid is absorbed, about 20 minutes. Meanwhile, stir together soy sauce, peanut butter, vinegar, and cayenne pepper in a small bowl; set aside. Heat olive oil in a skillet or wok over high heat.
As a result, a new noodle called sen chan pad thai (named after Chanthaburi Province) was created. Pad thai has since become one of Thailand's national dishes. Today, some food vendors add pork or chicken (although the original recipe did not contain meat because of the government's perception that pork was a Chinese meat).

Let cook without moving until the bottom sets, then start to scramble lightly, until the eggs are almost cooked. Transfer the eggs to the plate with the chicken.
